Chicken Ginger Soup: A Nourishing Dish for Good Health

Preparing the Ingredients

Chicken Ginger

  • Finely chop the ginger and dried shallots. Wash the young ginger leaves and cut them into small pieces.

  • Clean the chicken, rub it with lime and sea salt to remove any unpleasant odor. Rinse thoroughly and cut it into bite-sized pieces. Boil the neck, wings, and feet of the chicken separately to make the broth.

  • Marinate the chicken meat with 2 teaspoons of fish sauce, 1/2 teaspoon of salt, 1/2 teaspoon of chicken stock, and chopped ginger. Let it marinate for 15-20 minutes for the flavors to fully penetrate the meat.

Cooking Process

  • Sauté the dried shallots until fragrant, then add the marinated chicken and mix well. You can also add a pinch of turmeric for a beautiful golden color (optional).

  • Cover the pot and cook over medium heat for about 2-3 minutes to let the chicken release its juices, which will help the meat become firmer. Then, add the chicken broth (from the neck, wings, and feet) and bring it to a boil. Skim off any impurities. Note that the amount of water should be sufficient for the number of servings. If there is too much water, the soup will become watery and lose its natural sweetness.

  • After about 20-25 minutes, taste and adjust the seasoning if necessary (fish sauce, salt, chicken stock) to suit your taste. When the chicken soup turns golden, has a layer of chicken fat on the surface, a fragrant ginger aroma, and a natural sweet taste, add the young ginger leaves and mix well. Sprinkle some black pepper (or Sichuan pepper for additional flavor) to enhance the richness. Turn off the heat and serve the soup hot.
