How to Make Yogurt

First, pour the mixture of fresh milk and condensed milk into a pot. Heat it on the stove and stir until the mixture is lightly boiling. Then, turn off the heat and let it cool to about 40-50 degrees Celsius.

Before pouring the yogurt starter into the milk mixture, stir the yogurt starter to avoid clumps and ensure a smoother yogurt. When the temperature of the milk mixture in the pot reaches 40-50 degrees Celsius, pour in the yogurt starter and stir well.

Step 3: Preheat the Air Fryer

Next, turn on the air fryer and let it reach a temperature of 80 degrees Celsius for 5 minutes, then turn it off.

While waiting for the air fryer to heat up, you can pour the yogurt into glass jars to save time.

Step 4: Incubate the Yogurt

Place the prepared jars of yogurt into the air fryer and incubate for about 2 hours. After 2 hours, turn on the air fryer at 80 degrees Celsius for 1 minute, then turn it off. Leave the yogurt in the air fryer for at least 4 hours or overnight for a tangy and thick yogurt.

Important Notes

  • To ensure perfect yogurt, it is necessary to sterilize all the tools used, especially the glass jars. Cleaning the tools ensures that there are no bacteria, resulting in good quality yogurt without any slimy texture, thin consistency, incorrect color (green/yellow), unpleasant smell, or bitter taste.

  • A simple way to sterilize the tools is to rinse the condensed milk can with about 50ml or 1.5 cans of boiling water before use. Then, you can pour the condensed milk into the mixture right away. However, it is important to adjust the amount of rinsing water appropriately to avoid making the yogurt too watery.

  • If you want your yogurt to have a beautiful yellow crust, you can use hot water to dissolve a piece of cheese and pour it into the milk mixture.

  • During the incubation process, try to avoid moving or touching the jars of yogurt to prevent any disturbance to the yogurt’s solidification process. This helps to avoid water separation or breakage during incubation.
