What is Fake Wild Boar Meat?

Fake wild boar meat is a popular dish in Vietnam, especially during rainy days and cold weather. It is made from pork knuckles combined with various ingredients and spices to create a flavor similar to wild boar meat. That’s why it is also known as “fake boar meat” (a dish that imitates dog meat, with “boar” being a common term for dog).

The Steps to Cook the Most Delicious and Simple Fake Wild Boar Meat:

Step 1: Prepare the Ingredients

To create the distinctive flavor of this dish, you need to prepare the following ingredients:

  • Pork knuckles: 1 piece, about 1.5 – 2 kg
  • 2-3 stalks of lemongrass
  • 1 large ginger
  • 1 turmeric (can be replaced with turmeric powder)
  • 3 dried shallots
  • Shrimp paste, sugar, cooking oil, chili, fish sauce, fermented rice and peanuts are some of the spices needed.
  • Vietnamese coriander, Thai basil, green onions, cilantro, and other herbs.

Step 2: Prepare the Pork Knuckle

  • Remove the hair and clean the pork knuckle.
  • Use dry straw or sugarcane fiber to burn the pork knuckle, creating a smoky aroma. If you don’t have straw or sugarcane fiber, you can grill the pork knuckle directly on a gas stove.
  • After the pork knuckle is slightly charred, use a knife to scrape off the blackened outer layer, then rub salt on it and rinse with clean water. Cut the pork knuckle into bite-sized pieces.

Step 3: Marinate the Pork Knuckle

First, prepare a large bowl and place the pork knuckle in it. Next, mix ginger, turmeric, lemongrass, half of the chopped dried shallots, shrimp paste, fermented rice, half a tablespoon of sugar, and a tablespoon of cooking oil in the bowl with the pork knuckle. If you like spicy food, you can add some slices of chili. Mix well and marinate for about an hour to let the flavors penetrate the meat.

Step 4: Cook the Fake Wild Boar Meat

Reduce the heat and add a little oil to the pan. Sauté the remaining chopped dried shallots until fragrant, then add the marinated pork knuckle to the pan and stir-fry together. After that, pour water into the pan, enough to cover half of the pan and let the pork knuckle absorb the water. Cook for about 30 – 40 minutes or until the meat is tender and the water has been absorbed. Adjust the seasoning to taste and turn off the heat.

Step 5: Presentation and Enjoyment

Pour the fake wild boar meat into a bowl and sprinkle some Vietnamese coriander and Thai basil that have been cooked on top. Serve with rice, noodles, or grilled bread.

Note when cooking fake wild boar meat:

  • If possible, use the front part of the pork knuckle to make the fake boar meat, as this part is firm and flavorful.
  • When marinating the pork knuckle, add a little cooking oil to make the meat more tender.
  • If available, cook the fake wild boar meat in a clay pot instead of a metal pot. If using a pressure cooker, do not add water and cook for about 15 minutes at high pressure to prevent the meat from becoming too tender.
  • If you don’t have much time to simmer the meat, you can add a bit of baking soda to the pot and cook for about 20 minutes or until the meat is tender.
